Can I use a regular thermostat with a Single Zone VAV

Technically yes, but operationally no.
A regular 24VAC output thermostat will technically work with a Single Zone VAV (SZVAV) unit, but it will not provide variable supply air. Instead, it will actually perform as a 2-speed airflow unit. This includes Precedent, Odyssey, and Voyager units.
